Smoking is a traditional method of preserving food. Smoke is a key flavour tonality for a wide range of savoury products like meat, fish, dairy or snacks.

An alternative to traditional smoking is the use of smoke flavours which give food a smoky character. The specific combination of the woods being used for smoking enables mild or hearty, savoury or sweet notes.

All smoke flavourings need to be authorized for usage before they can be placed on the EU market. The European Smoke Flavour Regulation defines the general permissibility and the maximum use level for all smoke flavourings in the EU.
