Smoking is a traditional method of preserving food. Smoke is a key flavour tonality for a wide range of savoury products like meat, fish, dairy or snacks.

An modern alternative to traditional smoking is the use of smoke flavours which give food a distinctive smoky character. The specific combination of the woods used for smoking creates nuanced profiles – from mild to hearty, from savoury to sweet.

Following a new decision by the European Commission, smoke flavours will gradually be banned on the European market. For food manufacturers, this means that existing recipes must be reformulated and products redeveloped. Transition periods apply depending on the product category, defining when the use of smoke flavours will no longer be permitted.
